What is Veganuary?

Veganuary is an annual worldwide challenge started in the UK. It’s a registered charity founded by Jane Land and her husband Matthew Glover in 2014. The nonprofit promotes and educates about veganism by encouraging people to follow a vegan lifestyle for the month of January.

What Are The Benefits Of Participating In Veganuary (A Vegan Diet)?

What Can I Eat For Veganuary?

Short answer is a lot. Fruit and vegetables, of course. Nuts, nut butters, beans, grains, legumes and tofu. Some breads, rice and pasta’s. Dairy alternatives like oat milk, almond or soy milk. Vegan diets exclude all meat and animal products. Excluded are beef, poultry, seafood, dairy (milk and cheese) and eggs.

Is Vegan Different From Vegetarian?

Yes, avegan diet excludes all meat and animal products(meat, poultry, fish, seafood, dairy and eggs) whereas a vegetarian diet allows for eggs and dairy (milk and cheese) but also excludes meat, poultry, fish and seafood like a vegan diet.

If Removing All Animal Products From Your Diet Feels Overwhelming?

Try a more gradual approach; less restrictive approach. By just increasing the amount of vegetables, fruits, beans and nuts you eat at every meal.

Options Include:

  • Vegetarian aka Lacto-ovo vegetarian: allowing for eggs and dairy (milk and cheese).

He was overweight, pre-diabetic and faced a medical directive: adopt a vegan diet or go on medication. He was not a fan of a lifelong regimen of pills, but as a food writer he lived—and worked—to eat. So neither choice was appealing. His solution was a deal with himself. He would become a “flexitarian.” He adopted a diet heavy in vegetables, fruits, and grains by following a healthy vegan diet (no meat, dairy, or processed foods) all day. Easy Veganuary Recipe - Mason Jar Tomato Soup

Equipment

  • 4 mason jars

Ingredients

  • 1 package Spicy Italian Sausage - We Use Tofurky Vegan Italian Sausages
  • 2 cups Marinara Sauce
  • 2 cups Gluten-Free Pasta - we like Barilla brand
  • 2 cups Zucchini Noodles
  • 2 cups Spinach We like mixed field greens or spinach
  • 1 tablespoon Olive oil
  • 4 tablespoons Vegan shredded cheese - 1 tablespoons each or more if you like.
  • Salt and Pepper to taste

Instructions

  • Cook pasta according to package ingredients.

    2 cups Gluten-Free Pasta

  • Pre-heat skillet to medium heat. Add 1 teaspoon of oil to pan. Slice vegan sausage into bite size pieces and add to pan. Cook for about 5 minutes, until nice and crispy.

    1 tablespoon Olive oil, 1 package Spicy Italian Sausage

  • Between four mason jars divide marina sauce.

    2 cups Marinara Sauce

  • Divide remaining ingredients: zucchini noodles, plant-based sausage, spinach and pasta between four mason jars.

    1 package Spicy Italian Sausage, 2 cups Zucchini Noodles, 2 cups Spinach

  • Top with vegan cheese. Salt & Pepper to taste. Refrigerate until ready to eat.

    Salt and Pepper to taste, 4 tablespoons Vegan shredded cheese

  • When ready to eat add ½ cup of hot water (more if you want a thinner soup). Shake and pour soup into bowl.
