Ingredients

  • 1 tbsp 1 tbsp coconut oil or avocado oil
  • 2 tbsp 2 tbsp red curry paste
  • 1½ cups 350 ml coconut cream
  • 1 cup 240 ml water
  • 1 tbsp 1 tbsp fish sauce
  • 2 lbs 900 g white fish fillet, cubedwhite fish fillets, cubed
  • 1 lb 450 g bok choy, thinly sliced
  • salt, to taste

Making low carb simple

Instructions

  1. Heat the oil in a large saucepan, add the curry paste, and fry on moderate heat for 2-3 minutes to activate the spices.

  2. Add the coconut cream, water, and fish sauce and bring to a boil.

  3. Carefully add the fish and reduce the heat. Simmer for 10 minutes.

  4. Add the bok choy and cook for another 3-4 minutes.

  5. Serve in large bowls.

    Hi! Seems delicious but fish sauce without sugar is very hard to find in Belgium. Can I substitute this with something Else?

    I’m not a big fan of fish, but I do eat shrimp. Could I make this with shrimp instead?

    Maybe try anchovies (canned or jarred)? Or anchovy paste. Or just the oil from the canned or jarred anchovies. Anchovies themselves melt down easily in a pan or microwave.

    Yes, shrimp would work well in this dish.

    I added some al dente cauliflower for a bit of crunch and replaced half the fish for some scallops...It was AMAZING! Even the non-keto critics loved it!

    I was skeptical and almost didn't make this. It didn't sound good to me, plus the picture was gross, IMHO. However, I was surprised! It was delicious, even better the next day. I used shrimp.

    Great dish. Made it for my family and they all devoured it. Added noodles for the kids adults had it as per the recipe. Added some fresh coriander and a few drops of sesame oil to it.
